Our heritage-inspired botanical syrup is crafted from wild-foraged Shagbark Hickory bark, sourced right here on our farm in Long Valley, NJ. We slow-roast the fallen bark to draw out unexpected notes of vanilla, toffee and toasted wood — not smoke — brew it into a mineral-rich tea and finish it with organic cane sugar to transform it into this delicate, flavorful syrup.
Tasting Notes: The subtle essence of hickory balanced by warm notes of toffee, vanilla and wildflower honey. Often described as "sweet, but not too sweet" and a welcome difference from maple.

*While we are not formally organic certified, we follow all organic practices. Our farm has been herbicide and pesticide free since before we acquired it in 2016.

Mineral Profile and Sediment: Due to the unique mineral and nutrient profile of hickory bark, over time, charged particles will often begin to attract and suspend within the syrup. What you're seeing is actually the good stuff! This is totally natural and sign of minimal processing and refinement. Shake it up and it will disperse right back into the syrup.
